LAST MINUTE SWEET POTATO RECIPES

Today is one of the best days of the year! A day we are brought together by family and love. And a day we get to eat until our hearts are content (and stuffed)! It’s really easy to get off track during this time of year. You’re eating rich food you don’t normally have that have a high amount of calories. If you’re someone on the healthy life-style train, this day may come with a bit of disdain, as you don’t want to feel trapped and guilted by so much food. Are you in need of simple and delicious recipes for Thanksgiving? Do you want a healthy dish but don’t want to sacrifice the flavor? Try out these 2 easy sweet potato recipes! These dishes are full of flavor and yet don’t leave you feeling like you’re missing out on anything.  Give these a go for your Thanksgiving table!

SWEET POTATO WEDGES: SWAP FOR MASHED POTATOES

●     2 medium sweet potatoes

●     Olive oil

●     Fresh rosemary

●     Garlic powder

●     Red pepper flakes

DIRECTIONS:

●     Cut sweet potatoes in half, then turn on the flat side. Cut into 1-inch strips

●     Place in the same direction on a sheet pan, leaving space between each wedge

●     Drizzle with 1-2 tbsp of olive oil, then sprinkle with 2 tbsp fresh chopped rosemary, 1 tsp of garlic powder and red pepper flakes. Make sure the potatoes are evenly coated with oil and spices.

●     Roast at 400 degrees for 30 minutes, until soft and golden brown. Rotate wedges halfway through roasting.

●     Optional: top with parmesan cheese!

These are great for a lower calorie option. Not to mention are easy to both prep and clean up. Feel free to double the recipe, just leave enough room for a single layer of potatoes. Put onto 2 sheet pans if necessary!

SWEET POTATO WEDGES: SWAP FOR SWEET POTATO CASSEROLE

●     2 medium sweet potatoes

●     Coconut oil

●     Cinnamon

●     Nutmeg

●     Brown sugar

DIRECTIONS:

●     Cut sweet potatoes in half, then turn on the flat side. Cut into 1-inch strips

●     Place in the same direction on a sheet pan, leaving space between each wedge

●     Drizzle with 1-2 tbsp coconut oil (make sure it’s liquid, or use spray version) to coat the potatoes evenly. Sprinkle on ½ tsp of cinnamon and ¼ tsp of nutmeg, then toss the sweet potatoes to coat them with oil and spices.

●     Place in 400-degree oven for about 30 minutes, until soft. Rotate wedges halfway through roasting.

●     Sprinkle with 1-2 tbsp brown sugar for the last 5 minutes of roasting to melt the sugar (keep an eye on it so it doesn’t burn).

These are great for a sweet taste without overloading the calories. Quick, easy, and delicious! Also feel free to double the recipe or to make half sweet and half savory!
