CHICKEN & CHORIZO CASSEROLE

 
 

A delicious and easy recipe with very little prep!

Ingredients

  • 1 and ¼ cup rice (I used brown rice - which took much longer to cook)

  • About one pound of chicken breast, cut into bite-sized pieces

  • 4 oz of chorizo 

  • Two bell peppers, chopped

  • Two small onions, chopped

  • 4 oz plum tomatoes, halved

  • 1/2 cup of frozen peas

  • 1/2 cup of green beans (I had frozen asparagus spears so used those, chopped)

  • One teaspoon paprika

  • 1/2 teaspoon of garlic powder

  • Salt and pepper to taste

  • 2 cups of chicken stock

  • *green olives optional

Prep

  1. In a baking dish, add the rice, chicken pieces, chorizo, chopped peppers and onions, peas, and green beans (and olives if using). Season with the paprika, garlic powder, salt and pepper. Mix well.

  2. Put the plum tomatoes over top.

  3. Cover with foil then bake for 45 minutes at 350 F or until the rice is cooked through and all the chicken stock is absorbed.

    You should get 4 good size portions.
