PEACH SALAD WITH TOMATOES, FETA & BASIL VINAIGRETTE
A quick summer recipe which would make a good side with chicken on the grill. (Though we ate this for dinner alone last night). This one is from the Cooking Channel!
Ingredients
¼ cup torn fresh basil leaves
¼ cup extra virgin olive oil
¼ cup sherry vinegar (we only had red wine vinegar, which worked just fine)
1 tablespoon honey
1 teaspoon Dijon mustard
1 small shallot, chopped
Salt and pepper to taste
1 ½ lbs heirloom tomatoes, chopped (about two large)
4 or 5 ripe peaches, sliced into wedges (I cut these in half)
½ cup crumbled feta cheese, as garnish
Prep
In a blender, combine the basil, olive oil, vinegar, honey, Dijon mustard, and shallots.
Emulsify until the basil is pureed.
Season with salt and pepper to taste.
Combine the peaches and tomatoes in a bowl then add in the dressing and toss well.
Serve with feta cheese on top.
