QUICK & EASY INDIAN PORK CURRY WITH COCONUT SAUCE (from Savvy Bites)
My partner and I made this recipe just last week by Savvvy Bites. It was fairly quick and very delicious!
Ingredients
2 cups of pork tenderloin fillets cut into bite-size chunks (We just used what we had - pork chops)
2 tablespoons olive oil
1 yellow onion, diced
1 inch of fresh ginger, outer skin cut off, then chopped
3 cloves of garlic, minced
½ ground turmeric
2 teaspoons yellow curry powder
1 ½ teaspoons chili powder
(Mix the turmeric, curry powder and chili powder in a small bowl, ready for prep)
1 courgette, sliced in half length-wise the cut into half moons
2 ears of sweet corn, kernels cut off (I still found this in the supermarket) You can use ½ cup frozen sweet corn if the ears of corn are not available
1 tablespoon of smooth peanut butter
2 teaspoons of soy sauce
1 can of coconut milk, reduced fat is fine (that's what we had)
1 teaspoon of chili flakes, optional if you want extra heat
For Serving
3 tablespoons of chopped dry, roasted peanuts
½ bunch of chopped basil
1 lime, sliced into wedges, if desired
Cooked rice
Prep
Heat the olive oil in a non-stick pan
Cook the pork chunks until golden brown
Add in the onions, garlic, and ginger and cook until the onions are translucent, about 5 minutes
Mix in your turmeric, curry, and chili powder
Add your courgette slices and sweet corn
Mix together well then whisk in your coconut milk, soy sauce and peanut butter
Cook for 10 - 12 minutes until the courgette slices are tender and the pork is cooked through
Serve over rice and top with the chopped nuts and basil. Squeeze some lime juice over top each serving, if desired
