WATERMELON & FETA SALAD

This recipe is more of a summer side dish. I've made it multiple times because it's good, quick, and tasty, from NYT Cooking.

Ingredients

  • 2 lbs seedless watermelon, thinly sliced into irregular pieces. 

  • 2 tablespoons red wine vinegar

  • Salt 

  • One 6 oz block of feta cheese, thinly sliced into irregular pieces

  • 3 tablespoons extra virgin olive oil

  • Freshly ground black pepper

  • Torn leaves from a sprig of basil

Prep

  1. On a large platter, lay out the watermelon in a single layer, then douse it with the vinegar. (I did not measure out the two tablespoons. I just doused it from the bottle and covered the watermelon lightly.) 

  2. Season with salt

  3. Arrange the feta over the watermelon, drizzle on the olive oil, and season with the ground pepper.

  4. Spread the torn basil leaves over top.

  5. Serve.

This one is delicious in the hot weather!!
