This week's recipe is a cheat off the internet. Wonton Soup with pre-made frozen wontons. Fast and easy on a weeknight.

Ingredients

  • One quart of chicken broth

  • Bag of your favorite frozen wontons (We use Trader Joe's)

  • A bag of frozen spinach or 1 cup chopped bok choy

  • One bunch of scallions, thinly sliced

  • One medium onion diced

  • One garlic clove, minced

  • Two tablespoons of coconut oil

  • One teaspoon grated fresh ginger or ½ teaspoon ground ginger powder

  • Two tablespoons of low-sodium soy sauce

  • Salt and pepper to taste

Prep

  1. Heat the coconut oil in a soup pot, then sauté the onions until soft

  2. Add the garlic clove and heat quickly for a minute 

  3. Add the chicken broth and bring to a low boil

  4. As the chicken broth is heating up, add the ginger, soy sauce, and salt and pepper

  5. After reaching a low boil, add the spinach or bok choy and cook until they begin to wilt

  6. Add the frozen wontons and cook per package directions

  7. Turn heat down to simmer, then adjust soy sauce, salt, and pepper to taste

  8. Serve immediately and add scallions on top in each serving bowl
