RICOTTA MEATBALLS
We’re on a bit of a ricotta kick lately. And these meatballs are moist and tasty! You can bake them and freeze for later use or cook them in a large pan with your favorite marinara sauce!
LEMON RICOTTA PANCAKES
This recipe is an old one from the New York Times. I can't find the original but was able to recreate it a few weeks ago from memory. These are sweet and don't need a lot of syrup. We usually eat with some jam. They taste great the next day, even cold.
VEGAN CHICK’N CAESAR PASTA SALAD
A new lunch favorite in our household. A great way to sneak chickpeas and kale into your day! Art said I could have fooled him into thinking it wasn’t vegan. But if you’d rather swap for non-vegan alternatives, be our guest. This is a batch recipe that would last you 2 servings a day for a week - perfect if you have a roommate or partner. Otherwise, just halve the recipe!

HERB SKILLET CHICKEN WITH GREENS
I made this on a weeknight. Fairly quick and pretty tasty - a great recipe from NYT Cooking! In this easy skillet meal, seared boneless chicken thighs are nestled on a bed of herbs, browned whole garlic cloves and greens before the pan is popped into the oven to roast until golden.
15 BEAN SOUP
This recipe came off the label from HamBeens, a company that makes packages of a variety of 15 beans for various soups and chilis. You can look up their other soup recipes online. Another 'A' recipe from the Art Flores rating system.
BRAISED CHICKEN THIGHS WITH SWEET POTATOES & DATES
Art gave me an A+ for this one tonight! It takes some time to cook, but it's well worth the wait.
