FAST, DELICIOUS, & NUTRITIOUS: Kale Salad with Apples & Cheddar

 
 

Ingredients:

  •  4 cups finely chopped or slivered kale – remove from stems and wash thoroughly first

  • 2 tablespoons coarsely chopped toasted almonds (packaged toasted slivered almonds work well)

  • 1 sweet apple (Fuji or Gala), cored and cut into ¼ inch dice

  • 1 ounce sharp cheddar cheese, cut into ¼ inch dice

  • 2 tablespoons fresh lemon juice

  • Small garlic clove, minced

  • 5 tablespoons extra virgin olive oil

  • 2 tablespoons grated Parmesan

  • Salt to taste

Directions:

  1.  Combine the kale, almonds, apple and cheddar cheese in a large salad bowl

  2. Whisk together the minced garlic, lemon juice, olive oil and salt. Start with ¼ teaspoon salt then add more to taste per your own preference

  3. Add the dressing to the salad bowl and toss well.

  4. Let sit for about 15 minutes to soften the kale

  5. Sprinkle Parmesan on top and serve!
