LEMON RICOTTA PANCAKES
This recipe is an old one from the New York Times. I can't find the original but was able to recreate it a few weeks ago from memory. These are sweet and don't need a lot of syrup. We usually eat with some jam. They taste great the next day, even cold.
THE FRITTATA
Today, someone in the gym said, "You look like a frittata person." They are right. Love to make 'em. Love to eat 'em. I make these for brunch, but sometimes even as a dinner dish. Here is our version. Serve it with Art's guac recipe from a few weeks ago!

This was my go-to mid-morning pick-me-up when I worked a desk job since I would typically fast until I got most of my work done. I find it a lot easier to get stuff done on an empty stomach (and I think most people do as well) so this smoothie/drink was the perfect thing to get some nutrients and energy but not feel too full at the same time.
