MIDDLE EASTERN MEATLOAF WITH TOMATO RAISIN SAUCE
I made this one for Art and got an "A" in return. (A rarity)
LEMON & GARLIC CHICKEN WITH CHERRY TOMATOES
Another NYT recipe, great for a weeknight! This lemon and garlic chicken was delicious!
GREEN CHICKEN CHILI
Art made this one, and I gave him an "A." Great for leftovers.
CHICKEN BARLEY CHILI
This recipe was a "we have the ingredients in our pantry" so let's try it. Picky Art gave it a 4 out of 5.
PEACH SALAD WITH TOMATOES, FETA & BASIL VINAIGRETTE
A quick summer recipe which would make a good side with chicken on the grill. (Though we ate this for dinner alone last night). This one is from the Cooking Channel!
SKILLET CHICKEN THIGHS WITH TOMATOES
Made this one last week with a "Good" review from Art. A quick weeknight recipe from the NYT
CHEESY VEGETABLE STUFFED PORK CHOPS
From my mom's old Betty Crocker Cookbook. I've made this one for years.
WATERMELON & FETA SALAD
This recipe is more of a summer side dish. I've made it multiple times because it's good, quick, and tasty, from NYT Cooking.
TUNA STEAKS
This one is super-fast - all you’re really prepping is a quick marinade. We got tuna steaks from Wholey's and have eaten this twice already this summer!
COUSCOUS RISOTTO WITH TOMATOES & MOZZARELLA
A quick evening recipe from New York Times cooking. Watch how much salt you add! I put in too much to start. Add more at the end, if needed.
WARM AUSTRIAN POTATO SALAD
This recipe is not your traditional potato salad for the summer but has the advantage of not being mayo-based, so it can last longer without refrigeration.
LASAGNA SOUP
This is another New York Times recipe. A quick way to have a lasagna alternative that tastes delicious. There are a lot of ingredients, but it's easy to make!
RICOTTA MEATBALLS
We’re on a bit of a ricotta kick lately. And these meatballs are moist and tasty! You can bake them and freeze for later use or cook them in a large pan with your favorite marinara sauce!
LEMON RICOTTA PANCAKES
This recipe is an old one from the New York Times. I can't find the original but was able to recreate it a few weeks ago from memory. These are sweet and don't need a lot of syrup. We usually eat with some jam. They taste great the next day, even cold.
VEGAN CHICK’N CAESAR PASTA SALAD
A new lunch favorite in our household. A great way to sneak chickpeas and kale into your day! Art said I could have fooled him into thinking it wasn’t vegan. But if you’d rather swap for non-vegan alternatives, be our guest. This is a batch recipe that would last you 2 servings a day for a week - perfect if you have a roommate or partner. Otherwise, just halve the recipe!
GINGER CHICKEN WITH APRICOTS
A quick weeknight, one skillet meal!
WONTON SOUP
This week's recipe is a cheat off the internet. Wonton Soup with pre-made frozen wontons. Fast and easy on a weeknight.
FARRO SALAD
A weeknight favorite that I made yet again this week. A+ from Art
ROAST PORK BRAISED IN MILK
This recipe gets an A+ from Art! This one makes a delicious Sunday dinner!
SOY-GLAZED CHICKEN WITH PICKLED CUCUMBERS
This one is pretty quick on a weeknight. The latter recipe is simple but takes forever to cook. Make on a lazy, rainy afternoon while watching a movie!
